Lime Coleslaw

Simple and healthy coleslaw with lime and cilantro.

  • 3 cups shredded carrots
  • 5 cups thinly sliced cabbage (green, purple or a combination of both)
  • 3/4 cup chopped cilantro
  • 2 cups thinly sliced sweet bell peppers
  • 2-3 limes
  • 1/3 cup sliced green onions
  • salt and pepper to taste
  • 2 sliced jalapeƱos (optional)
  1. Combine the carrots, cabbage, cilantro, bell peppers and jalapeƱos (if using) in a large bowl.

  2. Squeeze the lime juice over the vegetables and toss together.

  3. Season with salt and pepper to taste.

  4. Cover the salad and let it sit in the refrigerator for an hour or overnight.
