A parrillada, or a barbecue, is not complete without a spicy salsa, but 13 Delicious Salsas for a Parrillada is even better. From smooth and creamy, to chunky, to crunchy, these salsas from Mexican bloggers from across the country are truly amazing.
13 Delicious Salsas for a Parrillada
My last trip to Mexico found us in the backyard of my beautiful grandmother’s house. She sat joyfully at the head of the table, surrounded by some of her children, grandchildren, and great-grandchildren. Her beautiful family gathered together, listening to music, laughing, talking.
My dad and uncle manned the grill during our parrillada (a cookout or barbecue) on a beautiful July afternoon. The rest of us awaited the delicious grilled meats while sampling and discussing the variety of salsas spread across the table.
The salsas, as colorful, varied, and unique as Mexican cuisine itself and a must for any good parrillada.
13 Delicious Salsas
Today, I have 13 Delicious Salsas for a Parrillada (or barbecue) to share with you. Some of these salsas are from my own repertoire of recipes. The others, I am excited and honored to say, are a collection from Mexican women all across the country.
From New York to California, Texas to Oklahoma and back here to Colorado, these are 13 Delicious Salsas for a Parrillada from some of the best Latina bloggers.
The Salsas
Pico de Gallo Salsa
Let’s begin with what might be one of the most popular salsas out there. Pico de Gallo is the definition of chunky salsa. It is made with a mix of diced vibrant red tomatoes, spicy jalapeños, crisp white onions, and fresh cilantro. It goes great with carne asada, burgers, or with crunchy tortilla chips.

Roasted Red Jalapeño Salsa
If it has the word roasted in the name, then it’s going to be good! Roasting vegetables adds an amazing smoky flavor to salsas, like in this great Roasted Red Jalapeño Salsa. Tomatoes, garlic, and red jalapeños are roasted to create a chunky salsa perfect on grilled meats or tacos.

Next, is this creamy and smooth salsa. It gets its beautiful green color from tomatillos and jalapeños, and its silky texture from avocado. This salsa is terrific with grilled meats, tacos, burritos, and eggs.

Salsa Borracha
With this salsa, you can have your beer and eat it too! Salsa Borracha (drunk salsa) is made with beer, but when the alcohol is burned off it leaves a rich and deep flavor. This is a perfect topping for carne asada and grilled meats.

No roasting, toasting, or boiling required for this marvelous salsa! Just throw all the ingredients in the blender until smooth. Then add some diced avocado just before serving. This is definitely worthy of some tortilla chips, and a nice carne asada would be wonderful with this too.

Fresh Cucumber Salsa
Certainly something as crunchy and fresh like this needs some tortilla chips right away! This healthy salsa is similar to pico de gallo. However, this one adds crunchy cucumbers for a light and refreshing twist. This is a great one for tacos, enchiladas, and grilled meats.
