Authentic Mexican Rice

In a medium saucepan, heat oil on medium heat and add the rice.

Sauté the rice until golden-brown, for about 5-7 minutes.

Use a mesh sieve to drain the oil from the rice. Set rice aside.

Add diced onion and diced garlic to the saucepan. Sauté until soft and fragrant, about 3 minutes.

Add the rice back in, along with 1 cup of hot water, the 1/2 cup of broth, tomato sauce, and the salt.

Use a fork to stir. Bring to a simmer and cover. When the water dries up, add another 1/2 cup. Repeat process a third time.

When the water has dried up, take the rice off of the heat. Carefully fluff with a fork.
