Creamy Tomatillo Avocado Salsa

When we were on vacation in Florida this summer, my family and I visited a Cuban restaurant in Miami. After we had ordered our Cuban sandwiches, my parents looked at the waiter and asked, "do you have any salsa or chile?" With a bit of a confused, and perhaps even surprised look, the waiter responded, "Well, we have Tabasco sauce."
"No, thank you," my parents responded, a little disappointed with the option offered.
My parent's request did not surprise me in the least bit and it's not that my parents don't like Cuban food. Chile is actually a request my parents make at most meals.
For my parents, as is true with many Mexican families, whether a dish is Cuban, Italian, Chinese, or Mexican, the meal is not complete without some fresh jalapeños, chile curtido (pickled jalapeños), or salsa that will add a spicy kick to each bite.
The Wonders of a Good Salsa
I too have learned the wonders a little spice adds to a meal, especially in the form of salsa. A great salsa can become the true star of a meal, and this creamy tomatillo avocado salsa is sure to be a showstopper.

I know for me it is every time I visit a taqueria. I always like to sample every single one of the salsas offered at the salsa bar. Yet, no matter the restaurant or the choices available, my favorite always tends to be the creamy green option.
This particular recipe for creamy tomatillo avocado salsa gets its beautiful green color from tomatillos and jalapeños. And unlike other creamy green salsas, this one does not have any dairy in it but instead gets its silky texture from the avocado.

How to Make
Creamy Tomatillo Avocado Salsa
Begin by boiling 2 jalapeños, ½ white onion, 7 medium tomatillos, and 1 garlic clove in plenty of water.
Boil the vegetables until the tomatillos and jalapeños are soft, which should take about 8-10 minutes. If you prefer, you can also roast the vegetables instead of boiling them, for a deliciously smoky taste.
Once soft, drain the water and let the vegetables cool.
Then, add the cooked vegetables to a blender or food processor. Add one cup of fresh cilantro, ½ teaspoon of salt and ½ teaspoon of black pepper.
Blend this all together until smooth.
Finally, add in one ripe avocado. Blend again until the avocado is incorporated fully and the salsa is a nice, smooth consistency.
This recipe makes plenty of salsa, so it is great to serve for company as you will have lots to share. As is the case at my house, we always like to have homemade salsa in the fridge, and this one is a great one to have on hand.
