Easiest Almond Butter Blossoms
Once the weather went from scorching hot to mildly cool, my two baking assistants (that would be my 5-year-old daughter and almost 3-year-old son) and I were in the kitchen ready to bake up some delicious goodies.
I love cooking, but baking will always be my first love. Baking in a kitchen without air-conditioning, however, is not fun. Instead, this is a task better left for the cool fall and winter months. So, as soon as the weather turns, the oven is awoken from its summer slumber ready to bake a tried and true favorite or a new concoction for the year.
Which brings me to today’s recipe for these almond butter blossom cookies. These are some of the easiest cookies I have ever made. They only require four ingredients, the steps are simple without the use of any fancy appliances, and they are ready super fast. Plus if you have some baking assistants ready to join in on the fun, kids will love helping out with this recipe.
Peanut Butter vs. Almond Butter
You might be more familiar with peanut butter blossoms than almond butter blossoms. This recipe is actually an adaptation of a recipe using peanut butter that I learned a couple of years ago.
The peanut butter version is great, but I wanted to try it out with almond butter. I am a huge fan of almond butter and was convinced the result would be just as good, if not better. Besides, almond butter is slightly healthier than peanut butter, so even more of a reason to try it. Just be sure to check the label and use an almond butter that only contains almonds or one that has only almonds and a bit of salt.

The verdict. . .the almond butter version is amazing!
With that being said, if you prefer to use peanut butter, you can easily do so. Just follow the exact same recipe below and replace the almond butter with the same amount of peanut butter.
Gluten-Free Almond Butter Blossoms
As I mentioned earlier, these delicious cookies only require four simple ingredients. The ingredients are so common, I can almost guarantee you probably have three of those ingredients in your kitchen right now.
The craziest thing about the ingredients is none of them are flour. All you need is almond butter, an egg, sugar, and Hershey’s Kisses. Therefore, these are a great gluten-free option.
Now, let’s find out how to make them.
How to Make the Easiest Almond Butter Blossoms
Begin by preheating the oven to 350°F.
Next, in a large bowl mix 1 cup of almond butter and 1 cup of sugar. You can use regular sugar but coconut sugar works great too.
Add one egg and stir completely until well incorporated.
Use a cookie scoop or a tablespoon to create one inch balls and place them on a baking sheet lined with parchment paper or a baking mat. These cookies don’t really spread so you can place them pretty close together.
Place the baking sheet in the oven, bake the cookies for 8-10 minutes.
In the meantime unwrap the necessary amount of Hershey’s Kisses.
As soon as you take the cookies out of the oven, carefully press a piece of chocolate into each cookie. The edges may crack a bit.
Allow the cookies to cool for 5 minutes and then place them on a cooling rack.
The more you let them cool the less crumbly they will be. Although, we usually can’t wait that long because we like when the cookies are still a little warm and the chocolate is soft and melty.

Ingredients

- 22-24 Hershey's Kisses

Notes
- Use almond butter that only contains almonds or almonds and a bit of salt.
- You can make peanut butter blossoms by simply replacing the almond butter with the same amount of peanut butter.
- Choose coconut sugar or regular sugar based on your preference.
- Decrease the sugar to 3/4 cup if you'd rather use less sugar.
- Recipe will yield between 22-24 cookies depending on their size.
