Today I am sharing with you a ridiculously easy breakfast that just happens to be my kids' all-time favorite dish to eat in the mornings.
Funny enough, this too was my favorite breakfast when I was growing up. Most mornings when my mom would ask me what I wanted for breakfast I would answer, "huevo con pedacitos de tortilla." This literally means an egg with pieces of tortilla.
Yes, that is all this fast and easy breakfast huevos con tortilla is - an egg scrambled with fried pieces of corn tortilla. It is so simple, but the crunchy, fried tortillas add such a great bite and flavor to the eggs that you would think more goes into it.
I have heard some people refer to this dish as migas con huevo. Migas means crumbs in Spanish, and refers to the tearing of the tortilla into small pieces. But in my house it was, and still is, "huevos con tortilla."
The best part of this dish is that it is a great breakfast for kids. They love the taste, it is fast to make, and satisfies my kids' tummies. There are so many mornings when I hear the small, precious voices of my kids asking for "huevos con tortilla."
Even though this is a great breakfast for kids, I do still make this for myself and my husband quite a bit. I think the dish is even better to eat now as an adult because I can top it off with some sour cream or fresh salsa. And fried tortillas with sour cream and salsa are just amazing!

How to Make Fast and Easy Breakfast
Huevos con Tortilla
To begin, cut or tear two corn tortillas into ½-inch to 1-inch squares.
Add two tablespoons of oil to a medium pan and turn heat to medium. When the oil is hot, but not smoking, add in the tortillas.
Fry the tortillas, mixing frequently, to allow them to cook evenly.
In the meantime, beat two eggs and season with salt.
When the tortillas begin to crisp up and turn a nice light golden color, add in the beaten eggs.
Scramble the eggs with the tortillas and make sure all the tortillas are coated with egg.
Cook until the eggs are set and fully cooked. Serve immediately.
This is the amount I make for both my kids to share or just one serving when I eat this for breakfast.
My kids like to eat the huevos con tortilla just like this. As I mentioned before, my husband and I like to add fresh salsa on top and sometimes a dollop of sour cream. This also goes great with a side of refried beans.

Ingredients
- 2 eggs
- 2 corn tortillas

I have been eating this dish since childhood. Delicious. My parents would make different variations of it like Migas ala Mexicana which they would add sliced tomatoes and onions. But I would always love the simple one just tortillas and eggs .

This was one of my favorites when I was kid. Sometimes Mami would make it for dinner. That was a treat! I too like it with just tortilla and egg. Now I've got a ten year old who loves to bake and Abuelita taught her how to make her tacos (they're the best in all the world) so tomorrow, I'm making these. Wife never eats breakfast and daughter doesn't usually eat eggs so might have to eat it all, though. 😁 In which case, I'm breaking out the salsa andnrefritos and maybe a little queso de la vaquita or cotijo, though I suspect Monterrey will be the better choice.
