Huevos Con Ejotes (Green Bean Scramble) is a simple, yet flavorful and healthy Mexican-style dish that's a great way to liven up the usual scrambled eggs.
Huevos Con Ejotes (Green Bean Scramble)
Most mornings my go-to breakfast is a quick couple of scrambled eggs with a side of toast or avocado. However, growing up it was rare to just have scrambled eggs. Whether it was huevos con tortilla (click here for the recipe), huevos con jamon (eggs scrambled with ham) or another easy and tasty scramble, there was always something to jazz up those eggs.
A great example of maybe an unknown friend of the scrambled egg, the green bean. Huevos on ejotes (green bean scramble) is a delicious Mexican-style scramble that incorporates green beans.
The ingredients include tomato, onion, jalapeño, green beans, and eggs. The ingredients are simple but the combination is so flavorful and healthy. Whole30 compliant? Why, yes it is!
Also, it is so easy to make that you can quickly whip this up on any given morning. It is so filling though that it can even be served for lunch or dinner.
So if you're ready for a quick and fantastic dish to get away from mundane scrambled eggs, I definitely recommend huevos con ejotes (green bean scramble).
How to Make Huevos Con Ejotes (Green Bean Scramble)
To begin, lightly scramble two eggs in a bowl and set aside.
Secondly, prepare your vegetables. Dice half of a tomato, half of a jalapeño (or the whole thing if you like the heat), and 1 tablespoon of onion.
Next, you will need ¼ to ½ of a cup of green beans (depending on how hearty you want your scramble). Cut the green beans in half or approximately an inch to an inch and a half long.
Now, I prefer to use canned green beans that have been drained. I like the flavor they add to the dish, plus they are very convenient. However, if you prefer you can use cooked fresh green beans. Click here for simple directions on how to easily cook green beans.
In a medium skillet, heat about 1 tablespoon of your preferred cooking oil or ghee. Then, add the diced onion and jalapeño. Sauté for about a minute until fragrant.
Next, add the green beans and sauté for another minute.
Finally add the tomatoes and eggs. Mix everything together until combined. Season with salt and pepper to taste.
Stir occasionally until the eggs are cooked. This makes enough for me for breakfast, but you can of course increase the ingredients for additional servings.
Eat them by themselves or serve them alongside some beans. These are also great topped with a spicy salsa, in case you are looking for an additional kick.

Ingredients
- 2 eggs
