Kids love hot dogs, at least mine do and I remember loving them growing up too. My mom usually kept a pack of hot dogs in the fridge for a quick lunch or dinner or for an easy breakfast of eggs scrambled with hot dogs.

In Mexico, we call this breakfast huevos con salchicha. The dish is a simple scramble of sliced hot dogs and eggs, which makes for quite a tasty combination. It is a favorite among kids, but you can enjoy it as an adult too. It is especially delicious topped with some homemade salsa. Try it with this jalapeño salsa or this salsa verde and you'll fall in love with this simple and easy breakfast.

How to Make Huevos con Salchicha (Eggs and Hot Dog Scramble)
To begin, slice one hot dog into ¼" thick pieces. Sauté the slices in a hot pan with oil over medium heat until golden on all sides.
While the hot dog slices are browning, whisk one to two eggs in a separate bowl. Add salt and beat the eggs until the whites and yolks are well incorporated.
Lower the heat to medium-low and pour the eggs over the hot dogs.
Stir the eggs and the hot dogs together until the eggs are cooked to your liking.
Check for salt and adjust seasoning as needed.
Variations
Huevos con Salchicha are delicious just as they are, but here are some easy variations to try:
- Sprinkle grated cheese over the eggs right at the end
- Sauté the hot dogs with diced onion and diced jalapeño
- Top with salsa, like this jalapeño one or this salsa verde
- Serve with a side of refried beans and with flour tortillas
