Papas con huevo (potato and egg scramble) is always a right choice when you're looking for a simple, yet filling and satisfying breakfast.
From a young age, papas con huevo has been a favorite of mine. We didn't have it often, but when we did, that was a breakfast that kept me smiling! Whenever my mom would have leftover cooked potatoes from dinner, it was almost certain they would make their way into this delicious scramble the next morning.
I love the flavor combination of eggs and potatoes so much, that now as an adult I make this breakfast quite often. It is an especially great one to make when I am on a round of Whole30. Not only is it extremely simple, but it is Whole30 compliant and keeps me full for a long time.
The definite added plus is that it is a kid-friendly meal, and I am always in search for foods my kids will enjoy too.
The Ingredients
The base ingredients for papas con huevo are pretty straightforward:
- Eggs
- Potatoes
- Salt
- Onion: This is optional, but I like to add diced onions which really kick up the flavor.
- For even more flavor and a nice Mexican variation you can add:
- Tomato
- Jalapeño
Tips for Making Papas con Huevo
Here are some other quick tips when making this breakfast:
- If you have leftover baked potatoes, then this dish will come together even faster. Since the potatoes are already cooked, you only have to dice them and crisp them up a bit.
- On the other hand, if you don't have leftover baked potatoes, not to worry. In most cases, I diced up some raw potatoes first. Then, I sauté them in some olive oil until soft and crispy. They do take a little longer to cook, but the end result is the same. This is one of the methods you will see in the recipe below.
- Another option is to parboil your potatoes. This step entails partially boiling the potatoes to ensure they are cooked on the inside. I have included steps for this method below as well.
- Finally my best tip when making papas con huevo, top it off with some jalapeño salsa. My mom's recipe for jalapeño salsa is absolutely perfect on this dish. You can find the recipe for Easy and Fast Jalapeño Salsa here.
How to Make Papas con Huevo
To begin, peel and dice 2 small or 1 medium potato into half inch pieces.
Parboiling Potatoes
If you choose to parboil the potatoes, add the diced potatoes to a small pot. Cover them with cold water and add a pinch of salt. Cover the pot with a lid and bring the water to a boil. Continue boiling for 5 minutes.
Remove the potatoes from the heat and drain. Place the potatoes on a paper towel-lined plate to dry.
Sautéing Potatoes
Once your potatoes are parboiled, or if you are using raw potatoes, continue with the following steps.
In a large pan or cast-iron skillet, heat up 2 tablespoons of olive oil (or your preferred cooking oil) on medium heat.
Salt the potatoes and add them to the skillet. Spread them in a single layer so they can cook evenly. Let the potatoes cook on one side for about 8 minutes (for parboiled potatoes check at 5 minutes).
Next, test the potatoes with a fork. When they're a bit tender, mix in 2 tablespoons of diced onion, if using.
Spread the potatoes evenly on the skillet once more and leave them for another 3-5 minutes until crispy.
While the potatoes are crisping up, beat and salt 4 eggs in a separate bowl.
Once the potatoes are crispy, pour the eggs in, making sure to cover all the potatoes.
Scramble everything together and cook the eggs to your liking.
Check for salt and adjust seasoning as needed.
Variations
- In addition to the onion, add a diced jalapeño and a diced tomato for another variation (although my kids don't tend to like this one as much).
- Top off your finished eggs with potatoes with some diced cilantro or sour cream.
- Did you cook up some bacon? Use the leftover bacon grease to cook the potatoes for amazing added flavor.
To Serve
This is really a wonderful breakfast all by itself, but is also great served with a side of refried beans, flour or corn tortillas. It is also amazing topped with a homemade salsa such as:

I havent made this exactly.. i used to live with a spanish couple and they introduced Me to ‘papas con huevos’ .. but they always used the twirly zesy french fries! I love them soooo much!
