Spicy Pineapple-Jalapeño Salsa
July has turned to August, the start of the school year is closing in, and the cicadas high-pitch song loudly emanates from the trees.
The end of summer is approaching, but I am holding on strong as long as I can. Our adventures this summer have just been amazing, from road trips, to camping, to endless family fun. Plus I can't get enough of all the delicious summer fruits.
I could live off of fruit, I am an especially big fan of peaches and watermelon. However, this year I have been loving pineapples. This is mainly because for the past month they have only been $1 at my local grocery store. So this means I have been buying a lot of pineapples!
Lucky for me too because fresh pineapple is the key ingredient for something else I am loving this summer, spicy pineapple-jalapeño salsa. This salsa is so easy to make and it is so good. All you need is pineapple, jalapeños, cilantro, lime and salt. The results is a crisp, sweet and spicy salsa that is perfect on grilled meats, tacos or just scoop it up with some tortilla chips.
Also, because it is made with all fresh ingredients, it is very healthy and Whole30 compliant.

How to Make Spicy Pineapple-Jalapeño Salsa
This recipe is super simple but does involve a bit of dicing. I suggest gathering and dicing up the ingredients to make the process even faster.
To begin, you will need two cups of fresh pineapple cut up in small cubes. You'll also need ½ cup of diced cilantro, 2 diced jalapeños, and ¼ finely diced white or red onion.
Add all the diced ingredients to a large bowl and mix together.
Next, add the juice of one lime and 1 teaspoon of kosher salt. Mix again.
Taste for seasoning and add more salt if needed.
Cover and place in the refrigerator for at least 30 minutes to allow the flavors to come together.
Ways to Serve It
This spicy pineapple-jalapeño salsa is best served at room temperature. It is a wonderful topping for any tacos or meat, especially pork. Plus because it is so chunky, it also great with chips and makes a great party dip.
