Huevos con Salchicha (Eggs and Hot Dog Scramble)

Huevos con Salchicha, a simple breakfast scramble of sliced hot dogs and eggs, that is a favorite among kids, and great for adults too, especially topped with spicy salsa.

  • 1 hot dog
  • 1-2 eggs
  • 1/2 tbsp oil
  • salt to taste


  • Slice hot dog into 1/4″ thick pieces. Sauté the slices in a hot pan with oil over medium heat until golden on all sides.
  • While the hot dog slices are browning, whisk one to two eggs in a separate bowl. Add salt and beat the eggs until the whites and yolks are well incorporated.
  • Lower the heat to medium-low and pour the eggs over the hot dogs.
  • Stir the eggs and the hot dogs together until the eggs are cooked to your liking.
  • Check for salt and adjust seasoning as needed.


  • Sprinkle grated cheese over the eggs right at the end
  • Sauté the hot dogs with diced onion and diced jalapeño
  • Top with salsa, like this jalapeño one or this salsa verde
  • Serve with a side of refried beans and with flour tortillas
