Remove from the heat and allow to cool.
Once cool, pour mixture through a mesh sieve and press to strain. Discard the blueberry skins.
Assemble Drink
Add ⅛- ¼ cup of simple syrup to a tall glass. Add lime juice and mix together.
Fill glass with ice and top off with sparkling water.
Garnish with fresh blueberries and a lime slice if desired.
Stir gently using a long spoon or straw and enjoy.
Notes
Store any leftover blueberry simple syrup in a glass jar or airtight container in the refrigerator for up to 3 days.
Adjust the sweetness to your liking by adding more or less of the blueberry simple syrup.
You can use frozen blueberries but just be sure to thaw them before using. You also may have to adjust the sweetness since frozen blueberries might be a little sweeter.
If you'd like to make this recipe into a cocktail, you could add vodka, rum, or tequila. Adjust the amount to your preference, but you could do half liquor and half sparkling water.
