A refreshing twist on a classic Mexican dessert, this Dairy-Free Berries with Creamis made with a silky blend of yogurt, coconut condensed cream and sweet, ripe berries. It's light, nourishing and comes together quickly for the perfect summer treat.
1-2tablespoonssweetener (optional, see notes)such as sugar or honey
Instructions
In a large mixing bowl, combine the yogurt, coconut condensed milk, coconut cream, and vanilla extract until smooth and creamy.
Cover the bowl and place in the refrigerator for 15-30 minutes to allow the flavors to meld and the cream to thicken.
Wash the berries thoroughly and slice the strawberries in quarters.
In individual glasses or bowls, add a couple tablespoons of the mixed berries, then top with a scoop of the creamy mixture. Continue layering the berries and cream until the glass or bowl is full.
Serve immediately.
Notes
I don't recommend mixing the berries and cream together in a large bowl, unless you are serving it right away. Letting the berries sit too long in the cream will make them mushy and watery.
For a dairy version, replace the yogurt, coconut condensed milk and dairy-free creamer with sour cream, regular sweetened condensed milk and evaporated milk.
