1
cup
basmati rice or long-grain white rice
1
tablespoon
olive oil
¼
diced white onion
1
diced garlic clove
1 ½
cups
water (see notes)
1
teaspoon
salt
1
tablespoon
salted butter
Instructions
Turn on the sauté option on your Instant Pot. Add in one tablespoon of olive oil.
When hot, add in the diced onion and diced garlic. Stir frequently until soft and fragrant, being careful that they don't burn.
Turn the sauté option off. Rinse and drain one cup of basmati rice using a strainer. Add the rice to the Instant Pot as well as the water.
Add in the teaspoon of salt. Use a fork to gently stir it in (see notes).
Cut up the butter and sprinkle the pieces all over the top of the water.
Place the lid on the pot and move the valve to sealing. Select pressure cook (or manual) and set the time for 4 minutes (see notes).
At the end of the time, let the pressure naturally release for 10 minutes. Then, manually release any remaining pressure.
Finally take the lid off and carefully fluff the rice with a fork.
Notes
By gently stirring and fluffing with a fork you’ll avoid breaking the rice which can cause the rice to end up mushy.
If you prefer a rice that is just a bit firmer, decrease the water to 1 ¼ cups and set the time from 4-5 minutes.
To double the recipe, double all of the ingredients but keep the cooking time at 4 minutes.
