This Agua de Durazno is made with ripe juicy peaches, a squeeze of fresh lime, and just enough honey to let the peach flavor shine. It's light, refreshing, and an easy way to enjoy one of summer's best fruits while it's at its sweetest. If you have access to Colorado's famous Palisade peaches, this is a delicious way to use them.
If making the honey simple syrup, combine the honey and 1 cup water in a small saucepan over medium-low heat. Stir until the honey dissolves completely. Do not boil. Let cool completely.
Wash and cut the peaches into smaller pieces for easier blending. There is no need to peel them.
Add the sliced peaches, 3 cups of water, and juice from the lime to a blender. Blend until completely smooth.
Pour the peach mixture through a fine-mesh sieve into a large pitcher if you prefer a smoother agua fresca. You can also leave it unstrained for more body and fiber.
Stir in the remaining 2 cups of water until well combined.
Add honey simple syrup or your preferred sweetener to taste.
Refrigerate for at least an hour until cold and the flavors have had time to come together.
Stir and serve over ice.
