Agua de Fresa, or strawberry agua fresca, is light, fruity, and naturally sweetened. Made with just fresh strawberries, water, and honey, this classic Mexican drink is incredible easy to make and bursting with real fruit flavor. This homemade version is wholesome, hydrating and perfect on a warm day or paired with your favorite Mexican meal.
In a small saucepan, combine the honey with one cup of water.
Heat over medium-low, stirring occasionally, just until the honey fully dissolves. Do not bring to a boil.
As soon as the honey dissolves, remove from heat and let cool completely.
Agua Fresca
Wash the strawberries by placing them in a large bowl covered with 4 parts water and 1 part white or apple cider vinegar.
Let them soak for 5 minutes, then drain and rinse under cold water.
Remove the stems, then halve or quarter the strawberries for easier blending.
Add 2 cups of cold, filtered water and the strawberries to a blender.
Blend for 1-2 minutes until completely smooth.
If you prefer a smoother drink, strain the agua fresca using a fine-mesh sieve into a large pitcher. This is usually not necessary, especially if using a high-powered blender.
Stir in the remaining 2 cups of water, ½ cup of the simple syrup, and lime juice (if using).
Taste and add more simple syrup if desired.
Refrigerate for 30 minutes to 1 hour until cold. You can also serve over ice and garnish with pieces of strawberry.
