Strawberry agua fresca is a classic Mexican drink that’s refreshing, lightly sweet, and incredibly easy to make. Unlike store-bought drinks, this homemade version is free of artificial ingredients, letting the natural sweetness of ripe strawberries shine.
I’ve shared other variations like Creamy Strawberry Agua Fresca and Limonada de Fresa, but this one keeps it as simple and refreshing as possible. Strawberries are packed with vitamin C and antioxidants, and when paired with honey, this agua fresca becomes a nourishing, hydrating, and delicious drink.
With just a blender and a few ingredients, it comes together in minutes. Then, just serve it over ice and enjoy.

What is an Agua Fresca?
Aguas frescas, meaning “fresh waters,” are popular Mexican drinks made by blending fresh fruit, cereals, flowers, or seeds with water and a touch of sweetener. They’re light, refreshing, and a staple in Mexican homes, markets, and street vendors.
Like other aguas frescas, strawberry agua fresca can be enjoyed year-round but is especially popular in warm months as a perfect way to cool down.

Ingredients & Substitutions
- Strawberries: Fresh, ripe strawberries provide the best flavor and natural sweetness. If they’re out of season, frozen strawberries can work but you may need extra sweetener.
- Water: I recommend cold, filtered water for the cleanest taste.
- Honey Simple Syrup: A blend of honey and water, this natural sweetener dissolves easily and enhances the strawberries’ flavor without overpowering them. You can also use maple syrup, agave, or regular sugar if preferred.

Instructions
- Make Honey Simple Syrup: In a small saucepan, combine honey and water. Heat over medium-low, stirring occasionally, until the honey fully dissolves (do not boil). Remove from heat and let cool completely.
- Wash Strawberries: Soak the strawberries in a large bowl with vinegar and water. Drain and rinse under cold water.
- Chop the Strawberries: Remove the stems, then halve or quarter the strawberries for easier blending.
- Blend the Strawberries: Add the chopped strawberries and 2 cups of water to a blender. Blend until completely smooth.
- Strain: For a smoother drink, strain the mixture through a fine-mesh sieve into a large pitcher.
- Mix Together: Stir in the remaining 2 cups of water and honey simple syrup. Taste and adjust sweetness as needed.

Ingredients
Simple Syrup
- ¾ cup honey sub with cane sugar
- 1 cup water
Agua Fresca
- 1 pound fresh strawberries
- 4 cups cold, filtered water, divided
- ½ cup simple syrup plus more per taste preference
- 1 tablespoon fresh lime juice (optional)

Honey Simple Syrup
- In a small saucepan, combine the honey with one cup of water.
- Heat over medium-low, stirring occasionally, just until the honey fully dissolves. Do not bring to a boil.
- As soon as the honey dissolves, remove from heat and let cool completely.
Agua Fresca
- Wash the strawberries by placing them in a large bowl covered with 4 parts water and 1 part white or apple cider vinegar.
- Let them soak for 5 minutes, then drain and rinse under cold water.
- Remove the stems, then halve or quarter the strawberries for easier blending.
- Add 2 cups of cold, filtered water and the strawberries to a blender.
- Blend for 1-2 minutes until completely smooth.
- If you prefer a smoother drink, strain the agua fresca using a fine-mesh sieve into a large pitcher. This is usually not necessary, especially if using a high-powered blender.
- Stir in the remaining 2 cups of water, ½ cup of the simple syrup, and lime juice (if using).
- Taste and add more simple syrup if desired.
- Refrigerate for 30 minutes to 1 hour until cold. You can also serve over ice and garnish with pieces of strawberry.
