Instructions
If making the honey simple syrup, combine the honey and 1 cup water in a small saucepan over medium-low heat. Stir until the honey dissolves completely. Do not boil. Let cool completely.
Add the papaya, 3 cups cold water, and lime juice to a blender. Blend until smooth.
Strain the mixture through a fine mesh sieve into a large pitcher.
Stir in the remaining 3 cups cold water.
Sweeten to taste with honey simple syrup or your preferred sweetener.
Serve over ice or refrigerate until chilled.
Notes
Papaya naturally creates a thicker, creamier agua fresca than many other fruits.
For a thinner consistency, strain the mixture a second time or use cheesecloth or a nut milk bag.
The sweetness will vary depending on how ripe your papaya is.
This agua fresca may thicken or separate slightly as it chills. Stir well before serving.
