    Agua de Papaya (Papaya Agua Fresca)

    Sweet, tropical, and incredibly refreshing, this Agua de Papaya blends ripe papaya, fresh lime juice, and a lightly sweetened honey simple syrup for a smooth and flavorful Mexican agua fresca. The papaya blends into an almost creamy drink with a vibrant tropical flavor that's hydrating and vitamin-rich. Ready in less than 15 minutes, it is great served with summer meals or enjoyed as an afternoon refresher.

    Growing up, aguas frescas were one of the simplest ways my mom turned fresh fruit into something refreshing for all of us to enjoy, especially during the warmer months. Some flavors were bright and icy, while others were smoother and more mellow, like this agua de papaya. Made with ripe papaya, fresh lime juice, and lightly sweetened to taste, it's a simple drink that feels both nourishing and refreshing.

    Papaya gives this agua fresca an almost creamy texture and a naturally tropical flavor that pairs especially well with lime. Like my Agua de Melón and Pineapple Agua Fresca, this recipe is made with real, simple ingredients and can easily be adjusted depending on how sweet your fruit is or how thick you prefer your agua fresca. I also love using a honey simple syrup here because it blends smoothly into the drink and adds a gentle sweetness without overpowering the flavor of the papaya.

    What is Agua Fresca?

    Agua fresca, which translates to "fresh water" in Spanish, is a light and refreshing drink commonly made by blending fruit, flowers, seeds, or grains with water and lightly sweetening to taste. They're popular throughout Mexico and often served ice cold during warmer months alongside meals or as an afternoon refreshment.

    While you'll find aguas frescas sold by street vendors, markets, and restaurants, they're also incredibly simple to make at home using fresh, seasonal ingredients.

    Ingredients & Substitutions

    This refreshing agua de papaya comes together with just a few simple ingredients: ripe papaya, fresh lime juice, water, and a lightly sweetened honey simple syrup. You can also sweeten it with your preferred sweetener, but I especially love using a honey simple syrup because it blends smoothly into the drink and adds a gentle sweetness that pairs well with the tropical flavor of papaya.

    How to Pick a Good Papaya

    Look for papayas with yellow-orange skin that give slightly when gently pressed. A ripe papaya should smell sweet near the stem and will blend more smoothly and give this agua fresca better flavor and natural sweetness.

    Step-by-Step Instructions

    1. Prepare the Papaya: Cut the papaya in half lengthwise and scoop out the seeds. Remove the skin, then cut the fruit into chunks.

    1. Add Ingredients: Add the papaya chunks, 3 cups of cold water, and fresh lime juice to a blender.

    1. Blend: Blend for 1-2 minutes, or until the mixture is completely smooth and creamy.

    1. Strain: Pour the blended papaya mixture through a fine mesh sieve into a large pitcher to remove any remaining pulp or seeds. For a thinner consistency, you can strain it a second time or use cheesecloth or a nut milk bag.

    1. Add Water and Sweeten: Stir in the remaining 3 cups of cold water. Taste and add honey simple syrup, or your preferred sweetener, a little at a time until the agua fresca reaches your desired sweetness.

    1. Chill and Serve: Refrigerate for 30 minutes to 1 hour or serve immediately over ice . Stir well before pouring, especially if the agua fresca thickens slightly as it sits.

    Texture Tip

    Papaya naturally creates a thicker, creamier agua fresca than many other fruits. For a smoother and thinner consistency, strain the mixture well using a fine mesh sieve, cheesecloth, or a nut milk bag. I personally don't mind the thicker texture, but you can easily adjust it by adding a little more water or straining multiple times.

    Storing

    Store covered in the refrigerator for up to 2 days. The drink may thicken slightly or separate as it chills. Simply stir well before serving and add a splash of cold water if needed to loosen the consistency.

    Ingredients
      

    • 4 cups fresh papaya, peeled and cubed
    • 6 cups cold filtered water divided
    • 1 lime
    • honey simple syrup or preferred sweetener to taste

    Honey Simple Syrup (Optional but Recommended)

    • ¾ cup honey
    • 1 cup water

    Instructions
     

    • If making the honey simple syrup, combine the honey and 1 cup water in a small saucepan over medium-low heat. Stir until the honey dissolves completely. Do not boil. Let cool completely.
    • Add the papaya, 3 cups cold water, and lime juice to a blender. Blend until smooth.
    • Strain the mixture through a fine mesh sieve into a large pitcher.
    • Stir in the remaining 3 cups cold water.
    • Sweeten to taste with honey simple syrup or your preferred sweetener.
    • Serve over ice or refrigerate until chilled.
