Dairy-Free Duraznos con Crema is a light, creamy Mexican dessert made with juicy fresh peaches and a rich blend of non-dairy yogurt, coconut condensed milk and coconut cream. This peaches and cream is the perfect summer treat, fruity, silky and just the right amount of sweet.
2tablespoonssweetener (optional, see notes)such as sugar or honey
Instructions
Add the yogurt, condensed milk, cream and vanilla (if using) to a large mixing bowl.
Use a whisk to mix well until smooth.
Cover the bowl and chill while you prepare the peaches.
Cut the peaches in half lengthwise.
Use the knife to loosen the pit and then remove it with your fingers.
Cut the peach halves into slices, about ¼-1/2 inch thick. (You can also cut the peaches into wedges or cubes if you prefer.)
Add the peaches to the cream and mix until combined.
Cover the bowl and place in the refrigerator for at least 15-30 minutes.
Serve chilled.
Notes
If your peaches aren't ripe or sweet enough, sprinkle them with a 1-2 tablespoons of sugar, honey or sweetener of choice and let them sit for 15 minutes to help bring out their natural juices and sweetness before mixing them into the cream.
For a dairy version, replace the yogurt, coconut condensed milk and dairy-free creamer with sour cream, regular sweetened condensed milk and evaporated milk.
