This Watermelon Pineapple Agua Fresca is a refreshing summer drink made with sweet watermelon, juicy pineapple, fresh lime juice, and water. Light, fruity, and easy to make, it's the perfect drink for barbecues, pool parties, and warm summer days.
If making the honey simple syrup, combine the honey and 1 cup water in a small saucepan over medium-low heat. Stir until the honey dissolves completely. Do not boil. Let cool completely.
Add the watermelon, pineapple, 2 cups of water, and lime juice to a blender.
Blend for 1 to 2 minutes, or until completely smooth.
Pour the mixture through a fine-mesh sieve into a large pitcher, pressing gently with a spoon to extract as much liquid as possible. Discard the solids.
Stir in the remaining 2 cups of cold water.
Taste and add honey simple syrup (or your preferred sweetener), if desired.
Refrigerate for 30 minutes to 1 hour, or until thoroughly chilled.
Serve over ice and enjoy.
Notes
If your fruit is very ripe and sweet, you may not need any additional sweetener.
Adjust the amount of water to make the agua fresca thicker or lighter to your preference.
