    Everyday Shredded Pork and Avocado Burritos

    Everyday Shredded Pork and Avocado Burritos

    One weekend while visiting my parents from college, I remember getting a phone call from my then boyfriend, Matt. He was home with his family for the weekend too and had spent a majority of that time bragging and dreaming about my mom's pork and avocado burritos. He had tried them at my house a few months before and had completely fallen in love with them.

    At that time I was not much of a cook, so it was my mom who passed along her recipe. Matt carefully jotted down the steps and I could hear his excitement on the other end of the line. That weekend he delighted his family by making his newfound favorite burritos for dinner.

    That was about 16 years ago. To this day these Everyday Shredded Pork and Avocado Burritos, are still one of my husband Matt's all time favorite burritos.

    About These Pork Burritos

    • A couple of weeks ago I shared a recipe for Everyday Shredded Pork, an easy recipe for an amazing, juicy, tender pork. The meat comes out so flavorful and it is the key ingredient in these burritos.  Find the recipe by clicking here.
    • Your favorite type of flour tortillas will work. I usually just use regular store-bought ones, but you can use gluten-free, Siete tortillas, or if you're up for it, some delicious homemade ones.
    • We, of course, add diced jalapeño because we like a little kick in our food. However, it is easy to leave that out if you prefer it that way for yourself or your kids.
    • If you have leftover sautéed pork from this recipe, save it for the following morning. Scramble some eggs with the pork, it is amazing!
    • These burritos are quite simple, but the combination of the tender pork, creamy mayo, avocado, and fresh vegetables make them seem so much more complex and gourmet.

    How to Make Everyday Shredded Pork and Avocado Burritos

    Ingredients for pork burritos #porkburritos #mexicanfood #porkandavocadoburritos

    To begin you will need 4-5 cups of my recipe for Everyday Shredded Pork. Click here for the recipe.

    In a medium cast-iron skillet or pan, heat 2 tablespoons of oil. When hot add the shredded pork and cook on medium heat. Stir the meat occasionally until the meat starts to crisp up.

    Then add ¼ diced onion and 1 diced jalapeño and continue cooking for an additional 2 minutes, until fragrant. Taste and adjust salt if needed.

    Kid-Friendly/Non-Spicy Tip: For my kids I add the onion but leave out the jalapeño. I sauté the meat with the onion and then separate a portion for them. Then I add the jalapeño to our portion and finish sautéing.

    Next, dice 2 cups of lettuce, 1 tomato, and mash 1 avocado. Set aside.

    Heat a comal or a griddle on medium heat. Place a flour tortilla on the comal and flip until warm and soft.

    Place the tortilla on a plate. Spread 1 ½ teaspoon of mayo on the tortilla and 1 ½ teaspoon of the mashed avocado on top of the mayo.

    Add 4-5 tablespoons (or as much as you want) of the prepared pork. Top with lettuce, tomato, and season with a sprinkle of salt.

    Fold your burrito and serve. Repeat the process with as many burritos as you wish to make.

    • 4-5 cups Everyday Shredded Pork (see recipe and notes)
    • 2 tablespoon oil
    • ¼ diced onion
    • 1 diced jalapeño (optional, see notes)
    • 2 cups diced or shredded lettuce
    • 1 diced tomato
    • 1 mashed avocado
    • ½ cup mayo
    • 8-10 flour tortillas (or as many needed)
    • salt to taste

    Instructions

    Notes

    • My Everyday Shredded Pork is the key in these burritos. To speed up the prep time, you can plan ahead and cook the pork the night before or in the morning. 
    • Kid-Friendly/Non-Spicy Tip: For my kids I add the onion but leave out the jalapeño. I sauté the meat with the onion and then separate a portion for them. Then I add the jalapeño to our portion and finish sautéing.
      • Leave out the jalapeño altogether if you prefer no spice.
