This Mexican Honeydew Agua Fresca with Mint is crisp, cooling, and just the right amount of sweet. Fresh lime and mint brighten the green melon flavor, making it a perfect summer drink. You'll want to keep some in your fridge to enjoy all summer long.

Growing up, aguas frescas were a staple in our home during hot summer days. My mom would always have pitcher ready for us to enjoy. These light, refreshing drinks, common all across Mexico, are made by blending fruit, seeds, flowers, or grains with water, then lightly sweetening to taste.
Today's flavor combines the mellow sweetness of ripe honeydew melon paired perfectly with fresh mint and a splash of lime. Like my Agua de Melón or Mango Agua Fresca, this recipe is made with real, simple ingredients and comes together quickly. It's naturally hydrating, full of vitamin C, and a nourishing and refreshing way to enjoy seasonal fruit.

Ingredients & Substitutions
This refreshing drink comes together with just a few ingredients: ripe honeydew, fresh mint, lime juice, water, and a touch of honey simple syrup. Use the ripest melon you can find for the best natural sweetness.
See recipe card for a list of all the ingredients and quantities.
Step-by-Step Instructions
- Cut Honeydew: Remove the seeds and rind, then cut the honeydew into chunks.
- Blend: Blend melon pieces, mint leaves, lime juice and some water until smooth.
- Strain: Pour the mixture through a fine mesh strainer into a large bowl or pitcher to remove any pulp.
- Add Water: Stir in remaining water and taste.
- Sweeten: If a sweeter result is desired add honey simple syrup a little at a time. Stir well, then refrigerate for 30 minutes to an hour or serve immediately over ice.
Hint: You can remove the seeds, but I recommend blending the melon with the seeds for added fiber, antioxidants, and nutrients. They do add an earthy flavor and more pulp, so straining is definitely a good idea.

Recipe
Honeydew Agua Fresca with Mint
Equipment
- Pitcher
- cutting board
- Knife
Ingredients
Honeydew Agua Fresca
- 1 medium ripe honeydew melon
- 1 lime
- 10 fresh mint leaves
- 5 cups cold, filtered water, divided
- honey simple syrup (see notes) or sweetener of choice
Instructions
- Wash and cut the honeydew into chunks. You can remove the seeds, but I recommend blending the melon with the seeds for added fiber, antioxidants, and nutrients.
- Add 3 cups of cold water, honeydew pieces, mint leaves and lime juice to a blender.
- Blend for 1-2 minutes until smooth.
- Strain the mixture through a fine mesh sieve or cheesecloth to remove any remaining pulp or seeds.
- Pour into a large pitcher and stir in the remaining 2 cups of water.
- Taste. If a sweeter result is desired add honey simple syrup (or preferred sweetener) a little at a time until preferred sweetness level is reached.
- Stir well, then refrigerate for 30 minutes to an hour or serve immediately over ice.
Notes
- Start with 10 mint leaves or even less for a more subtle flavor. Use up to 15 leaves for a stronger flavor.
- In a small saucepan, combine ¾ cup honey with 1 cup of water.
-
Heat over medium-low, stirring occasionally, just until the honey fully dissolves. Do not bring to a boil.
-
As soon as the honey dissolves, remove from heat and let cool completely.
