    Easy Whole30 Tuna Salad Lunch Bowl

    Easy Whole30 Tuna Salad Lunch Bowl

    Some days my lunch consists of tasty dinner leftovers from the night before. This is always a welcome answer to the dreaded question, "what should I have for lunch today?" However, more often than not, there is no magical little container of leftover dinner waiting for me when I open the fridge.

    On these days, I stare blankly at the open refrigerator waiting for inspiration of something I can make to satisfy my midday hunger.

    It was on one of these days that I came up with the recipe for today's easy Whole30 tuna salad lunch bowl.

    This salad comes together so quickly with very limited ingredients like creamy mayo and pickled jalapeños. Then I serve it with some greens, carrots, tomatoes, and avocado and I'm telling you the combination is sensational.

    This has become my favorite go-to lunch. It is extremely easy to make, it is full of fresh, crisp flavors, it fills me up, and it's healthy. This really is the perfect lunch.

    How to Make Easy Whole30 Tuna Salad Lunch Bowl

    To begin, use a fork to mix one can of tuna with 1 ½ to 2 tablespoons of mayo (depending on how creamy you want it). Add 1 diced pickled jalapeño, 1 teaspoon of the pickled juice, and 1 teaspoon of olive oil (leave out the olive oil if your tuna already has some).

    Then, mix everything together.

    For a Whole30 compliant tuna salad, be sure to use compliant tuna, mayo, and pickled jalapeños.

    Next, assemble your bowl.

    You can of course use whatever veggies you want. With as many times as I have made this tuna salad lunch bowl though, I have found the best combination is:

    • A bed of mixed greens or spinach
    • Grape tomatoes
    • Baby carrots
    • Sliced avocado

    Finally, add your prepared tuna salad to the bowl of veggies and sprinkle a little bit of salt and pepper over it.

    That's it! It is ready to eat!

    However, I do want to offer you one more tip if you are not on Whole30. For some added protein and nutrients, add some cooked quinoa to the bowl. I have tried quinoa in this bowl quite a bit and it is such a perfect, tasty addition.

    Super easy right? If you like tuna and you like salads, this will make a great go-to lunch for you too.

    Easy Whole30 Tuna Salad Lunch Bowl

    Ingredients
      

    • 1 can tuna
    • 1 ½ - 2 tablespoon mayo (see notes)
    • 1 diced pickled jalapeño
    • 1 teaspoon pickled jalapeño juice
    • 1 teaspoon olive oil
    • 1 cup spinach or mixed greens
    • ¼ cup grape or cherry tomatoes
    • ¼ cup baby carrots
    • ½ sliced avocado
    • ½ cup cooked quinoa (optional, see notes)

    Instructions
     

    • Use a fork to mix the tuna with 1 ½ to 2 tablespoons of mayo (depending on how creamy you want it). 
    • Add the diced pickled jalapeño, pickled juice, and olive oil (leave out the olive oil if you’re tuna already has some).
    • Mix everything together and set aside.
    • In a medium to large bowl, place the spinach or mixed greens on the bottom.
    • Arrange the tomatoes, carrots and avocado in the bowl.
    • Lastly, add the prepared tuna salad.
    • Season with salt and pepper.

    Notes

    *For a Whole30 compliant tuna salad, be sure to use compliant tuna, mayo, and pickled jalapeños.
    *If not on Whole30, add some cooked quinoa to the bowl for added nutrients and protein. If you do use quinoa, you can split the tuna into two portions.
