A fresh and crisp lime coleslaw is the perfect summer side dish and so healthy that it is Whole30 compliant.
The last couple of weeks have been so busy with BBQs, cleaning and decluttering, belated birthday and Mother’s Day celebrations, graduation parties, family dinners, time spent with family visiting from out of town, pool visits, and just everyday life.
Then there’s this blog thing I decided to start doing. Finding the time and energy to write has been a little challenging. Most nights after the kids have gone to bed, my husband Matt easily persuades me to relax on the couch and watch TV. As he falls asleep after two seconds of sitting on the couch, I get wrapped up in watching old episodes of Community or Bob’s Burgers before I too snuggle up and drift off to sleep.
Before we know it, we both wake up between 1am and 2am. With the imprint of the couch cushions still on our faces, we drag our tired bodies to the comfort of our bed. Needless to say, sitting in front of my computer to write has not been happening.
However, that is going to stop! Although my husband is still busy teaching a summer theater camp for his high school students, he is officially on summer break from school. This means he will be around a lot more, the stress of school will subside and we will do many fun things.
My hope is to find more time to be productive and to use the excitement of the summer break and the many things we have planned to motivate me to write . . . and to go to bed at a reasonable hour.
Lime Coleslaw
So in the spirit of summer, I have a new recipe to share with you today.
For a belated and joint celebration of Mother’s Day and my sister’s birthday, my family came over to my house for a family dinner. Everyone had a different dish to contribute, and one that I made was this fresh and crisp lime coleslaw.
I originally got the idea for this coleslaw from my brother-in-law who masterfully whipped up something similar years ago for a BBQ. I immediately loved the simple yet delicious flavors.
Since then I have come up with different variations of this tasty lime coleslaw. The great thing about it is you can add all sorts of vegetables or make it spicy with some sliced jalapeños. The key is to always have a base of cabbage (either green, purple or both), carrots, cilantro and lime. The combination of these four ingredients is very refreshing and the longer everything sits together the more flavorful this lime coleslaw becomes.
This is a great side dish for the summer. It is so easy to prepare and will pair perfectly with any meat, especially with pork. The best part about this version is it is very healthy, and since it has no added sugar it is Whole30 compliant.

Lime Coleslaw
Ingredients
- 3 cups shredded carrots
- 4 cups shredded cabbage (green, purple or a combination of both)
- ¾ cup chopped cilantro
- 2 cups thinly sliced sweet bell peppers
- 2-3 limes
- ⅓ cup sliced green onions
- salt and pepper to taste
- 2 sliced jalapeños (optional)
Instructions
- Combine the carrots, cabbage, cilantro, bell peppers and jalapeños (if using) in a large bowl.
- Squeeze the lime juice over the vegetables and toss together.
- Season with salt and pepper to taste.
- Cover the salad and let it sit in the refrigerator for an hour or overnight.
Notes
- You can also substitute pre-shredded coleslaw mix for the carrots and cabbage
- If you are not on Whole30, mix the lime juice with a tablespoon of honey and then drizzle and toss over the coleslaw for a sweeter variation
