When peaches are at their peak, I can't get enough of them! They've always been my favorite fruit, sweet, juicy and with such an amazing flavor. I recently discovered just how incredible they can be in savory dishes too, like today's recipe for pico de gallo with peaches.
In this twist on the classic Mexican staple, tomatoes are swapped with fresh peaches. The rest of the traditional ingredients remain the same, and the combination results in a salsa that's sweet, tangy, and refreshing.
Like my traditional Pico de Gallo, Mango Pico de Gallo, and Roasted Corn Pico de Gallo, this version highlights seasonal produce, while keeping the recipes simple and wholesome. Peaches also add a vibrant flavor and plenty of vitamins, fiber, and antioxidants.

Ingredients
- 2 fresh peaches
- 2 medium jalapeños
- ¼ white onion
- 2 tablespoon chopped cilantro
- 1 lime
- ½ teaspoon kosher salt plus more to taste
