    Today's recipe combines two of my favorite things, spicy pico de gallo and delicious pasta. However, the pasta in this recipe is unlike any I have ever had before because it is seaweed pasta. And I am here to tell you, seaweed pasta is quite tasty.

    This pasta, created by Blue Evolution, is made with a blend of durum wheat and seaweed. It really doesn't taste like seaweed though. Instead it has a delicate flavor and a delicious, yet subtle, umami taste. Better yet, it is much healthier than regular pasta because it is a great source of plant-based iodine, magnesium, and iron.

    Blue Evolution Seaweed Pasta can be combined with your favorite sauce, but you are definitely going to want to try it in this Pico de Gallo Seaweed Pasta. The citrus-flavor, spiciness, and freshness of pico de gallo are perfect with this pasta, plus it is so easy to make and is a great side dish.

    How to Make Pico de Gallo Seaweed Pasta

    To begin, prepare the Blue Evolution Penne Seaweed Pasta according to the package directions. Drain the pasta and toss with 1 tablespoon of olive oil and the juice of half a lime. Set aside.

    Next, dice up 2 tomatoes, 1 medium to large jalapeño, ¼ onion, and ¼ cup of cilantro. In a large bowl, mix the vegetables together and add the juice of half a lime.

    Add the pasta and toss to combine. Taste for seasoning and sprinkle with kosher salt as needed.

    Cover and place in the refrigerator for at least 20 minutes to allow the flavors to come together.

    Serve cold or at room temperature.

    Ingredients
      

    • 12 oz Blue Evolution Seaweed Penne Pasta
    • 1 tablespoon olive oil
    • 2 Roma tomatoes
    • 1 medium jalapeño
    • ¼ onion
    • ¼ cup cilantro
    • 1 lime
    • kosher salt to taste

    Instructions
     

    • Prepare pasta according to the package directions.
    • Drain the pasta and toss with 1 tablespoon of olive oil and the juice of half a lime. Set aside.
